breakfast meatballs

Yield: 4 servings

Ingredients

1 egg
1 pound ground beef, preferably grass-fed
3 tablespoons coconut flour
¼ cup minced green onion
¼ cup chopped coriander
1 teaspoon onion powder
salt and peper to taste
1 tablespoon coconut oil, melted
1 medium sweet onion, finey chopped
2 large tomatoes, chopped

Instructions

In a large bowl whisk the egg until lightly beaten. Add the beef, coconut flour, green onion, cilantro, onion powder, salt and pepper and mix until well combined. Form into 1-inch balls.

Heat the oil over medium in a large skillet or Dutch oven. Add the meatballs and cook, turning frequently, for about 4 minutes.

Add the onion and cook for 3-4 minutes until starting to soften. Add the tomatoes and cook for about 3 minutes more or until the meatballs are cooked through and the vegetables have softened
