Cooking temp Low Cooking time 8-9 hours Serves 4 Ingredients 2 tablespoons olive oil 625g boneless chicken thighs, cubed 1 onion cubed 75g chorizo 1 teaspoon of smoked paprika 2 cloves garlic, finely chopped 2 tablespoons plain flour (gluten free is poss) 600ml chicken stock 1 sliced red pepper 200g tin of sweetcorn 400g haricot beans 300g new potatoes 2 sprigs of rosemary Salt and pepper Chopped parsley to garnish Directions Fry the chicken, onion and chorizo in a pan and when nicely coloured add in the paprika, garlic and flour. Gradually mix in the stock, and then add in the pepper, sweetcorn, beans and potatoes. Finally add the rosemary, and salt and pepper. Transfer to the slow cooker, making sure the chicken and potatoes are covered by the liquid. Cook for 8-9 hours and serve with a garnish of parsley
