![]() Prep time 5 minutes Cooking time 25 minutes Serves 2 Ingredients ! cup of cauliflower rice 2 large chicken breasts (skin on) 3 spring onions chopped 1 clove garlic finely chopped 2 teaspoons of coconut oil pinch of salt 1 teaspoon black pepper 3 heaped teaspoons chinese 5 spice 1/2 inch chopped fresh ginger Directions Preheat oven to 180c. Chop the spring onions to add to the cauliflower rice later. Melt the coconut oil and add to a bowl, with the 5 spice, garlic, ginger and salt to stir into a paste. Coat the chicken in the marinade and place in the oven for 25-30 mins. Check the chicken is cooked by inserting a knife and seeing if the juices run clear. Cook or reheat the cauliflower rice adding in the spring onions and a little salt. Stir occasionally to stop the rice from burning.
