Chicken and Squash Soup

Serves 2

Ingredients

Roast chicken pieces
Carrot, sliced
Celery, chopped
Quarter of butternut squash, cubed into small pieces
Thyme
Parsley
Salt
Pepper

Directions

Bring some bone broth to the boil. Click here for the bone broth recipe. Add the chicken pieces, squash and veg to the broth and cook until the squash has gone soft. Simple and delicious!

I think chicken and squash is really inseparable. It breaks my heart that now that I have switched to a plant based diet, I can no longer cook these kinds of dishes. I am glad that I just recently discovered healthy and cruelty free substitutes for chicken. Now I guess I am going to give this recipe a try. Mushroom powder does wonders in making veggie meat taste more like chicken. I also notice that tofu skin tastes like beef strips sometimes. If you fry it in salt and pepper, it really tastes like the real thing. No need to suffer I guess.
