Lynn Maindonald's Turkiche!

Prep Time 5 minutes
Cooking Time 30minutes
Serves 6-8

Ingredients

400g Turkey or Chicken Mince
4 rashers smoked bacon
Half onion, chopped
6 vine tomatoes, halved
2 handfuls of spinach
1 teaspoon thyme
1 teaspoon sage
1 teaspoon butter
6-8 eggs
Salt and pepper to season

Optional - grated cheese, sour cream

Directions

Preheat the oven to 180C. Add the turkey and some seasoning and blend in a food processor until smooth. Grease a pie dish with butter and line the tray with the turkey. Place in the oven for 10 mins. Fry the bacon and onion while the base is cooking, until the onion is soft. Also beat the eggs, adding in the thyme and sage (add in cream here - optional)

Once the base is cooked, layer your Turkiche as follows; spinach, halved tomatoes, onion mix and then eggs. You may choose to add a handful of cheese on top if you tolerate dairy well.

Place in the oven for 20mins and then serve hot or cold.
